Recipe of the Quarter
Miso Soup/smaller>/color> |

4-5 servings/color>
Ingredients:/color>
4-5 cups filtered water/color>
1-2 inch strip of Wakame, rinsed
and soaked 5 minutes
/color>
in 1 cup of water, until
softened/color>
1 cups thinly sliced Diakon Radish/color>
2 cups leafy greens (Kale,
Dandelion or Collards)/color>
2-3 teaspoons Barley Miso/color>
2 Scallions, finely chopped/color>
Directions:/color>
1./color>
Chop soaked Wakame./color>
2./color>
Discard soaking water or use on houseplants for a boost of
minerals./color>
3./color>
Place water and Wakame in a soup pot and bring to a boil./color>
4. /color>
Add Diakon first and simmer gently for /color>
5 minutes or until tender./color>
5./color>
Add leafy vegetables and simmer for 2-3 minutes./color>
6./color>
Remove about 1/2 cup of liquid from pot and dissolve Miso into
it.

Return it to the pot./color>
7./color>
Reduce heat to very low; do not boil or simmer Miso broth./color>
8./color>
Allow soup to cook 2-3 minutes./color>
9.
/color>Garnish with
Scallions and serve./color>
